Are you planning a vacation on the Côte d'Azur with a passion for food and wine? Let me share my insider secrets with you for a day in Nice, a city part Provençal, part Italian, uniquely Niçoise. Nice cuisine means olives, oils, pissaladière, tians, petits farcis, panisses, pan bagnat, beignets, brousse, daubes, and especially socca, the famous chickpea pancake. If some of this is a mystery to you, don't worry, you'll be eating like a vrai Niçois by the end of the day!

We'll start with the enticing smells and sights of the Cours Saleya market, stopping for tastes of olives, breads, cheeses, and meeting my favorite vendors with produce straight from their farms.

Let us explore the maze of shady streets and sunny piazzas of Vieux Nice, the Old Town, as we discover a treasure trove of artisan food shops. Late morning we'll have a snack of socca with a glass of rosé wine, the authentic street food of Nice. Before lunch we have a tasting of local wines (including the rare Bellet,) in the 18th century cellars of a fourth generation wine merchant.

Not sure which olive oil to buy? We'll taste an extraordinary selection of the best oils Provence has to offer, each paired with an appropriate dish, tapas style. In the afternoon you can take a siesta on the famous Promenade des Anglais, take in a museum, or go shopping with Hélène, a long-time resident of Nice with a nose for the best of whatever!

We'll make your dinner reservations for you; your choice from our list of very biased recommendations! Your Nice Day starts at 9:30 a.m. and ends at 4 p.m. Cost includes wine tasting, socca, olive oil tasting, and light lunch. Evening apero, dinner, and any other drinks/snacks are not included. €300 for one or two people, €500 for three or four people.

Our home will be L'Aube Safran, a delicious B&B Surrounded by olive trees, lavender, herbs, and crocus fields in the village of Le Barroux. Accomodations are in charming Provençal rooms, each with a private bath. The owners, Marie and François, were architect/designers in Paris before they worked their magic on this adorable house. Not only are they wonderful hosts, they grow and sell exquisite saffron - an essential ingrediaent in our cooking classes.

Cost: $3,850 Includes accommodations, all meals (breakfasts, lunches, dinners with wines), visits, tuition and local transport. Single supplements may be available at $750. TASTE OF PROVENCE is delighted to announce a repeat performance of the cooking vacation with a difference. Mary Sherman, excercise mentor par excellence, of Mill Valley, is joining Tricia Robinson for a week of Pilates fitness classes, exercise, and hiking to support our eating and cooking program in Provence!

Tricia will teach cooking classes of authentic Provençal dishes, using the abundant local fish, fruits, and vegetables. We'll take morning trips to outdoor markets, sample wines at nearby wineries, taste olive oils, honey, cheeses,enjoy lunch in the vineyard, browse antique and flea markets, and have time left for shopping in Avignon.

Mary will hold Pilates stretch and exercise classes on the olive-tree terrace and lead hikes in the hills around. There's a pool on the grounds for lap swimming or lazing. Each morning you can take a hike before breakfast.

Cost for the program is $3,500 based on double occupancy. Single rooms may be available for a $550 supplement. This includes accommodations, tuition, breakfasts, lunches, dinners and accompanying wines, pick-up and drop-off at Nice airport, and local transportation in our private mini-van. Limited to eight guests.

We can also arrange an add-on in Paris before or after the program in Provence.
